Day 80 (17/11): Almond Lace Cookies

These, hands down, are the best gluten-free cookies you'll ever taste. They taste like a pure caramel cookie — heaven.


I used the Sally's Baking Addiction recipe for these almond lace cookies, and she did not disappoint. In fact, she came through SO hard that these are now one of my favourite cookies.


I used ground almonds (almond meal) instead of almond flour, and they worked perfectly fine. There were no adjustments needed — unless, for some reason, you can taste the difference between almond meal and almond flour in a cookie?


If you make something from the blog today, this has to be it. They have brown butter, sugar, and almonds; what's not to love about them?



PS: I'd advise against adding chocolate. It would ruin the cookie :o
