Day 18 (16/09): Jello Mousse

On day 18, I made strawberry jelly mousse using my new pastry rings! I had been waiting for them for a long time, and they arrived a day earlier than expected. To test them out, I tried out a mousse recipe using the smallest ring.


The mousse tasted quite good, especially for such an easy recipe. :)


I started by covering a plate with parchment paper and placing the pastry ring on top.

Then, I crushed four digestive biscuits and mixed them with two tablespoons of melted butter. This mixture formed the base of the mousse. Then, I pressed the mixture into the pastry ring using a spoon.

Then, I placed the base in the freezer to chill for an hour, after which I made a bowl of jelly (following the instructions on the jelly pack).

While the jelly and the mixture set, I whipped a squeeze of fresh cream with about a tablespoon of whip topping.

After whipping the cream for around one minute, I added it to the almost set jelly.

Next, I added the whole mixture to the pastry ring and let it chill in the freezer.

I then boiled some more jelly and poured it into the pastry ring; this gave a nice dark pink colour to the mousse.


I let the mousse set in the freezer for about an hour. To defrost it, I used a hairdryer. This step made me feel like a real baker! I have ALWAYS wanted to do this – it's finally crossed off my baking bucket list, hehe.
